It was a landmark move when we revisited the revolutionary old ideas of our ancestors and distilled an organic crop of barley in 2003. The industrialization of both distilling and agriculture had disconnected us from grain and ground to the detriment of our abilities to translate flavor from grain through to glass. Two decades on, we continue to champion organic systems that express a true sense of place, while regenerating the land. Here on Islay, this delicately nuanced malt is distilled slowly, through our tall, narrow-necked stills, before being matured in ex-bourbon and ex0wine casks. Rich and creamy in character, this single malt is a testament to the patience of our farming partners and our distilling team.
